(94) Τὸ δὲ γάλα τὸ γινόμενον ἐν ταῖς κυούσαις ἂχρηστον εἶναι οἴεται, ἐὰν μὴ ἑπταμηνιαῖον γένηται τὸ κύημα· καὶ τότε εὔτροφον τὸ γάλα. ἄριστον δὲ γάλα οἴεται εἶναι τὸ παχύτατον καὶ κιρρότατον, τὸ δὲ λεπτότατον καὶ λευκὸν ἀτροφώτατον· τὸ μὲν γὰρ λιπαρόν, τὸ δὲ ξηρόν. δῆλον δὲ ἐπὶ τῶν τυρῶν· οἱ γὰρ κιρροὶ καὶ λιπαροὶ καὶ τρόφιμοι, οἱ δὲ λευκοὶ ἄθρεπτοί εἰσιν, ὅθεν καὶ ἧττον τρόφιμοι.
