Ἥκιστα δ’ ἂν ὑπίδοιτό τις οἴνους παχεῖς ὅσοι καθαροὶ καὶ διαυγεῖς εἰσι καὶ τὴν χροιὰν ὦχροί καὶ ξανθοί· λευκὸν δ’ οὐδ’ ἂν εὕροις οἶνον ἅμα καὶ γλυκύν, ὥσπερ οὐδὲ τῶν ξανθῶν αὐτῶν σφόδρα γλυκύν. εἰσὶ δὲ σύμπαντες οἶ τοιοῦτοι οἶνοι μέσου τὴν σύστασιν χυμοῦ γεννητικοί.
