Ἐκεῖνο δ' ὡς οἰκεῖον τῶν χυλῶν πειρᾶσθαι δεῖ διαιρεῖν οἷον ποῖον μᾶλλον καθ' ἕκαστον γένος ἢ τὸ ξηρὸν ἢ τὸ ὑγρὸν, ὥσπερ ὁ ὀξὺς ὑγροῦ δοκεῖ μᾶλλον καὶ ὁ αὐστηρὸς ὁ δὲ δριμὺς ξηροῦ καὶ ὁ γλυκύς· παχυνόμενα δ' οὖν τὰ ὑγρὰ γλυκύτερα. Ὁ δὲ πικρός ... τάχα δὲ οὐθὲν ἂν ταῦτα διαφέροι γινομένων γε πάντων ἐξ ἀμφοῖν εἰ μὴ αὐτῶν τούτων θάτερον μᾶλλον ὑλικόν.
